From the mountains of Timaná, Huila, this Castillo from Finca Kodu offers a playful and distinctive expression of Colombian coffee. Carefully grown at high altitude and processed through a coconut co-fermentation before being washed, the coffee develops an unmistakably tropical and dessert-like character while maintaining the structure and clarity of a washed coffee. The cup opens with the comforting sweetness of freshly baked coconut cake, followed by creamy vanilla and rich chocolate. Beneath its expressive coconut character, the coffee remains smooth and balanced, with a gentle sweetness that lingers long after each sip. It is a vibrant example of how thoughtful fermentation can create new and exciting flavour experiences while still allowing the quality of the coffee itself to shine.

COTA works across Colombia's coffee-producing areas, allowing each coffee to express the unique characteristics of its terroir and producer. The project also collaborates with producers and roasters to develop distinctive lots and processing approaches that bring out new expressions of Colombian coffee. The Finca Kodu lot is one example of this approach: a Castillo from Timaná, Huila, produced by Juan Guillermo Misteli and processed using coconut co fermentation. The coffee demonstrates how producer knowledge, careful fermentation, and Colombia's diverse coffee-growing environments can come together to create a highly distinctive cup.
