Through our collaboration with Finca Los Pozos, we source carefully selected cherries from this region and focus on transforming them through controlled fermentation at Creativa Coffee District. This connection between origin and process allows each coffee to express both character of the land and precicion of its development. The Splash is the process of this coffee, extended fermentation at controlled temperatures (14’C), resulting in a rich, silky body with tropical fruit flavors and tartaric acidity.

Located on the slopes of Volcan Baru, Tierras Atlas is recognized for its high-altitude farms, volcanic soils, and diverse microclimates, condition that shape some of Panama’s most distinctive coffee profile. Through our collaboration with Finca Los Pozos, we source carefully selected cherries from this region and focus on transforming them through controlled fermentation at Creativa Coffee District. Creativa Coffee District (CCD) is a specialty coffee processing project based in Chiriquí, Panama. Built by transforming a traditional wet mill and drying patio into a modern processing facility, CCD works closely with coffee producers in Boquete, Hornitos, and Renacimiento to process carefully selected, ripe coffee cherries into distinctive microlots and nanolots. CCD combines traditional coffee knowledge with experimental fermentation and drying techniques, developing processes designed to highlight the character of each coffee while creating greater consistency and complexity. Their work includes innovative methods such as Splash, Dynamic Cherry, Intrinsic Cherry, and other controlled fermentation processes. Beyond coffee processing, CCD was created around the idea of bringing art, experimentation, and specialty coffee together. Their approach aims to create new expressions of Panamanian coffee while supporting producers through higher-value specialty coffee and more sustainable processing practices.
